10½ cup crumbled blue cheese (Gorgonzola, Roquefort, or Stilton)

Instructions1Preheat oven to 220°C (425°F).
2Spread frozen steakhouse fries on a baking sheet.
3Toss with olive oil, salt, and pepper.
4Bake 25–30 minutes, flipping halfway, until golden and crispy.
5While fries bake, heat butter and olive oil in a skillet over medium-low heat.
6Add sliced onions, sugar, and a pinch of salt.
7Cook slowly (about 20 minutes), stirring occasionally, until onions are soft, golden, and caramelized.
8Stir in balsamic vinegar (if using) during the last 2 minutes of cooking.
9Once fries are ready, transfer to a serving platter or cast-iron skillet.
10Top with the caramelized onions.
11Sprinkle generously with crumbled blue cheese.
12Dollop with sour cream or drizzle lightly if desired.
13Garnish with fresh parsley.
14Serve hot as a side or sharable appetizer.
